INTRODUCTION:

An absolutely classic Davis Dainty Dish. This recipe has been published over and over in Davis cookbooks for the past 100 years. A traditional cheesecake that has been a staple in Australian kitchens for generations.

YOU WILL NEED:

Biscuit Base: 

  • 125g sweet biscuits, crushed
  • 60g Butter or margarine melted

Filling: 

  • 375g Cream Cheese 
  • 100g (1/2 Cup) Castor Sugar 
  • 20ml (1 Tablespoon) Lemon Juice
  • 1 sachet of Davis gelatine
  • 60ml (1/4 Cup) hot water
  • 300ml (1 ¼ Cup) cream, lightly whipped
DIRECTIONS:

Biscuit Base: 

  1. Combine biscuit crumbs and melted butter. 
  2. Using the back of a spoon, press onto the base of a 20cm spring form pan. 
  3. Refrigerate until chilled.

Filling: 

  1. Beat cream cheese and castor sugar until smooth. 
  2. Beat in lemon juice. 
  3. Add gelatine to the hot water and stir briskly with a fork until dissolved. 
  4. Allow to cool and add to cream cheese mixture, mix well. Fold in cream. 
  5. Pour mixture into prepared biscuit base. Refrigerate until firm.
