ANZAC Protein Biscuits

INTRODUCTION:

These ANZAC bikkies are soft, chewy and delicious! Loaded with the goodness of collagen from the DAVIS Baking Protein. The most well known Australian biscuit recipe just got a little better with protein.

YOU WILL NEED:

Makes approx. 6-8 biscuits

Dry Ingredients: 

  • Approx. ½ Cup (74g) White Plain Flour 
  • ¼ Cup (57g) White Sugar 
  • ¼ Cup (24g) Davis Baking Protein 
  • ½ Cup (58g) Roughly chopped Quick Oats 
  • ¼ Teaspoon (0.8g) Baking Powder 

Wet Ingredients: 

  • 4 Tablespoons (39ml) melted Coconut Oil 
  • 1 Heaped Tablespoon (22g) Golden Syrup 
  • 5 Teaspoons (25ml) Milk
  • ¼ Teaspoon (0.6ml) Vanilla Essence
DIRECTIONS:
  1. Preheat oven to 160ᵒC (fan forced) and line baking tray with baking paper.  
  2. Combine dry ingredients into bowl and mix until uniform. 
  3. Add coconut oil into bowl and mix (or pinch with clean hands) until consistency of large breadcrumbs. 
  4. Gently warm the milk and golden syrup together in a microwave until the syrup is dissolved (Note: do not boil). 
  5. Add vanilla essence and milk/golden syrup mixture into bowl and mix thoroughly. 
  6. Divide dough up into balls and flatten on baking paper. 
  7. Place in oven for approximately 8-10 minutes until edges start to turn golden brown.  Note: cooking times may vary depending on oven type. 
  8. Take out of oven and leave on cooling rack until cool.
